Catalunya and Barcelona are well known for the delicious food elaborated with fresh ingredients and the good wines such as Priorat, Penedès, Empordà… but probably the most international “wine” we produce in Catalunya is our famous sparkling wine Cava! Yes, we are talking about bubbles.
At the end of the 19th century, some wine makers from the Penedès region started imitating the metode champenoise from Champagne region in order to produce Catalan sparkling wine. At the beginning just some thousands of bottles were produced, but little by little this product became very popular so more and more wine producers started elaborating Cava. Nowadays more than 200 million bottles are produced per year.
Penedès is the main region of Cava (30min south Barcelona) and the cava capital is Sant Sadurní d’Anoia. This little town of 10.000 people, hosts the main producers, such as Recaredo, Gramona, Freixenet, Codorniu, Juvé&Camps, Llopart or Agustí Torelló. However, there are many other small and medium producers which elaborate very interesting and delicious cavas.

3 white local grape varieties are the ones which are mainly used to elaborate Cava. Each one has its own personality giving different aromas, flavors and textures. These varieties are: Xarel·lo, Macabeu and Parellada. However, Chardonnay can also be used.
There are also rosé cavas and red local varieties are used for these: Grenache, Trepat and Monastrell (Mourvèdre). Pinot Noir is also accepted.
Depending on how long is the aging in bottle, cava is distinguished in Young, Reserva or Gran Reserva. The longest is the aging, the most delicate, complex and pleasant.
– Young: 9-15 months aging
– Reserva: 15-30 months
– Gran Reserva: +30 months
Once the aging period finishes and the producer decides to launch it into the market, the cava will be disgorged and refilled afterwards. This refilling can be done with the same cava (Brut Nature) or adding some sugar (Brut).
